- 1 onion, diced
- 3 cloves garlic, minced
- 12 oz chorizo sausage, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt, to taste
- Pepper, to taste
- Chopped fresh parsley, for garnish
Directions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Add the sliced chorizo sausage and cook for 5-7 minutes, until browned.
